Delicious Chocolate Mousse (dairy and sugar free)

A healthy, yet decadent dessert

I made this chocolate dessert ahead of the Easter weekend and it is a fab one. A glass of fresh raspberries smothered in a creamy, chocolate mousse sprinkled with pistachios… how can that be guilt free you ask? Well there are no eggs, no cream, no milk, no sugar and no, it’s not the vitamin C in the raspberries that make it healthy… (hint) the mousse is made from a green fruit that you won’t even taste…

 

Avocado it is! Combine it with almond milk to make a wonderful smooth texture and the flavour is subtle enough so you won’t be able to guess it. The raw cacao gives us the base and maple/agave syrup is the sweetener with a little dash of vanilla too. Just blend all the ingredients together and then chill in the fridge. Serve in any form of glasses that you may have mixed in with some berries.

I like to sprinkle it with pistachio nuts and finish with a raspberry on top! Most won’t guess the ingredients and will scrape out every last bit… hope you’ll enjoy it as much as we did!


INGREDIENTS:


  • 1 cup avocado

  • ¼ cup raw cacao powder (sifted)

  • 2 tbsp agave or maple syrup

  • ¼ cup almond milk

  • ½ tsp vanilla essence

  • 1 punnet of raspberries

  • 2 tbsp chopped pistachios


INSTRUCTIONS:


  1. Peel the avocados and put in processor to blend.

  2. Add the cacao powder, agave syrup and almond milk and process to thick purée.

  3. Add more agave or almond milk to taste.

  4. Add raspberries to glasses or small serving bowls.

  5. Scoop mousse on top.

  6. Cover and chill up to an hour.

  7. Sprinkle chopped pistachios and serve.
